Tilapia and/or Flounder recipes that get rid of that frozen fishy ...

Anything with lots of lemon will help.but frozen fish will always taste "frozen" or really fishy.I try to buy fresh fish when I can try browned butter with lemon juice and capers .tangy and zesty! Just top the grilled or broiled fish with it and serve with a green salad and maybe some dilled rice also—flounder is fishy normally.tilapia is a way milder fish

Pamesan Tilapia: INGREDIENTS 1/2 cup Parmesan cheese 1/4 cup butter, softened 3 tablespoons mayonnaise 2 tablespoons fresh lemon juice 1/4 teaspoon dried basil 1/4 teaspoon ground black pepper 1/8 teaspoon onion powder 1/8 teaspoon celery salt 2 pounds tilapia fillets DIRECTIONS Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish. **************************************… Lemon Garlic Tilapia: INGREDIENTS 4 tilapia fillets 3 tablespoons fresh lemon juice 1 tablespoon butter, melted 1 clove garlic, finely chopped 1 teaspoon dried parsley flakes pepper to taste DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray. Rinse tilapia fillets under cool water, and pat dry with paper towels. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes. **************************************… Baked Tilapia with Dill Sauce: INGREDIENTS 4 (4 ounce) fillets tilapia salt and pepper to taste 1 tablespoon Cajun seasoning, or to taste 1 lemon, thinly sliced 1/4 cup mayonnaise 1/2 cup sour cream 1/8 teaspoon garlic powder 1 teaspoon fresh lemon juice 2 tablespoons chopped fresh dill DIRECTIONS Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish. Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides. Arrange the seasoned fillets in a single layer in the baking dish. Place a layer of lemon slices over the fish fillets. I usually use about 2 slices on each piece so that it covers most of the surface of the fish. Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork. While the fish is baking, mix together the mayonnaise, sour cream, garlic powder, lemon juice and dill in a small bowl. Serve with tilapia. **************************************… Coconut Tilapia with Apricot Dipping Sauce: INGREDIENTS 1 cup flaked coconut, finely chopped 2 tablespoons flour 1 tablespoon Creole seasoning 4 (4 ounce) fillets tilapia 1/2 cup cornstarch 1 (4 ounce) carton egg substitute 1/2 cup canola oil Apricot Dipping Sauce 1/2 cup apricot jam 2 teaspoons brown mustard 1 teaspoon prepared horseradish DIRECTIONS Toss together the coconut, flour and Creole seasoning in a bowl. In a separate bowl, toss the tilapia with the cornstarch, and shake off the excess. Pour the egg substitute into a separate bowl, and dip the fillets in the egg. Press fillets in the coconut mixture coating all sides. Heat canola oil in a frying pan to a temperature of about 350 degrees F (175 degrees C). Fry fillets one or two at a time on both sides until golden brown. Remove to drain on a paper towel. Prepare the apricot dipping sauce by stirring together the jam, mustard, and horseradish in a small bowl. Serve the tilapia accompanied by the dipping sauce. **************************************… Tilapia With Wine and Tomatoes: INGREDIENTS 4 (4 ounce) fillets tilapia salt and pepper to taste 4 tablespoons butter 3 cloves garlic, pressed 4 fresh basil leaves, chopped 1 large tomato, chopped 1 cup white wine DIRECTIONS Preheat a grill for medium-high heat. Place the tilapia fillets side by side on a large piece of aluminum foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a packet. Place packet on a cookie sheet for ease in transportation to and from the grill. Place foil packet on the preheated grill, and cook for 15 minutes, or until fish flakes easily with a fork. Open the packet carefully so as not to get burned from the steam, and serve.
